My favourite home food

This is basically congee or Kanji -> as its known where I am from

1 Cup rice

1/2 Cup green lentils soaked for 4 hours

1/2 cup desicated coconut

Wash rice and lentils together around 3 times or till the water runs clear

Boil them in a large pot with atleast 5 to 6 cups of water covering with a lid until teh rice is partially cooked through

Then add coconut and cook until the lentils are soft.

Simple kanji -> Best served with unsweetened yogurt with salt.

Can be topped with anything you desire – I personally prefer some Indian style pickle or chutneys.

Its warm, wholesome tasty and fills the tummy.
