How do I meal prep without wasting food, money, time, or mental sanity

Hi all,

I’m 22M and this is my cry for help. I’ve always wanted to eat healthier and properly but it’s been a real struggling point in my life for the past few years. I’ve tried to buy stuff in bulk and cook it on the go, or meal prep and pull stuff out as I need, however cooking on the go I find myself wasting exorbitant amounts of time through the day, or for meal prep, I’ll get bored of what I have made and then just not eat and it goes to waste. I love to eat, but I’m definitely the type of person that likes to be excited at mealtime rather than be able to eat the same chicken and rice every day for a week or something that is really bland. I’ve managed to take junk food almost completely out of my life, but I still get takeout almost every day and at that it’s expensive and unsustainable. I find that when I’m eating junk or only about 1 meal a day it gets really hard to focus and brain fog starts to take control of my life. I’ve always felt that if I could get eating and nutrition under control I would be able to progress in other aspects of my life as well but I can never seem to get it down consistently and I’m hoping someone here can help guide me in the right direction.
