Advice for young person new to cooking? Calorie dense, nutritious, easy to prepare meals?

Hi All. I’m 23 and very underweight. Ever since moving out of my parents’ house, I’ve been struggling hard with feeding myself. I did a little cooking when covid hit, but it was labor intensive and expensive.

I usually order takeout or eat restaurant meals but I’m currently in a very tight financial situation and need to find ways to make cheap meals at home that are easy. I have health problems that I suspect is from vitamin deficiencies and barely have energy to do anything, let alone cook. Most days I’ll be too tired to get up from bed and prepare something, even when I’m hungry. Sometimes I get like less than 800 calories a day and it’s taking a toll on my health.

My bf doesn’t eat much either and we’re pretty much in the same boat. We really can’t bother to make homemade meals but it’s now a necessity. We usually eat 1-2 times a day that have all the calories we consume for the day. I don’t get hungry till the evening so it’s basically like intermittent fasting. I’m also down to eat pretty much anything as long as it’s nutritious. I hate cooking but I’m not picky.

I’ve been looking at budgetbytes and they have some really yummy looking, simple recipes I’d love to follow. But if anyone has any advice for me, as someone who is overwhelmed by adulthood, I’d appreciate it so much. Cooking is THE HARDEST part of moving out, that after 2 years I still cannot get a handle of. Thank you
