A staple of student menu on budget: rice + sunny side eggs with sweet and savoury soy sauce

Okay, ehem, egg and rice are college student’s staple—the Holy Grail of college student daily life with a tight budget in my homecountry. There are many recipe combinations that I can think of, from egg fried rice to fried egg kind of dishes…When I got super lazy, I usually just cook sunny side up egg and eat that with steamed rice, drizled with soy sauce—usually the sweet soy sauce. If I feel a little bit fancy, I’ll tweak this dish by upgrading that to another level. My recipe is based on this , but I tweak that a little bit.

This dish is so simple. Basically just fried eggs cooked with pre-made sauce and that’s it! So without further ado, here it is.

Ingredients
– Steamed rice
– 2 eggs
– 2 small scallions of spring onions , chopped
– Oil or fat for frying
– 1 tbsp butter

Sauce ingredients: this is just a rough guide, pls adjust to taste!
– 1 tbsp soy sauce
– 1/2 tbsp sweet soy sauce
– 1 tsp white pepper powder
– 1/2 tbsp minced fresh garlic/ 2 garlic cloves, minced
– 50 mL/ 1/4 cup water

Methods
1. Prep all the ingredients, from chopping to mincing. Combine all sauce ingredients in one bowl, don’t forget to adjust to taste!
2. Heat your frying pan in medium heat, put some oil/fat and first sauté the chopped spring onions. After it gets fragrant , crag your eggs and fry them to your preference, e.g. until the edge got somewhat crispy.
3. Turn down the heat to low-medium and pour down your pre-made sauce from the bowl, little by little while scooping the sauce from time to time to the top of the eggs. Do this until the sauce thickens. Then turn off the stove.
4. Optional step: after turn off the stove, add 1 tbsp of butter to the pan, stir until it just melts and serve that on top of rice ASAP. Overheating soy sauce with butter can separate the oil layer from the sauce. From my experience, this can result in unwanted sauce texture and not so savoury sauce…
5. Pro tips: After serve your eggs on top of your steamed rice, put some rice to the pan because we don’t want to waste that godly savoury sauce. Salvage as much sauce as you can, that’s a pro tip from my Dad.
